Need receipe for pineapple pastry like those in pastry shops.?

Hi, my kids love pineapple pastry and mango pastry from a pastry shop about 45 min drive from our home. I bake cakes for them mostly by using cake mix but I am very interested in getting a good receipe for pineapple pastry including what kind of base cake is best (from scratch)and also how the frosting is made. Any short cut methods for making the cake and/or frosting would also help. Hoping to get a response. Thanks.

PINEAPPLE PASTRIES

1 can (9 oz.) crushed pineapple
2 tbsp. sugar
1 tbsp. cornstarch
Dash of salt
1 pkg. pie crust mix

Mix together pineapple, sugar, cornstarch and salt. Cook over low heat until thick and clear. Cool. Prepare pie crust mix according to package directions. Roll out on floured board to 1/8 inch thickness. Cut circles with 2 1/2 inch round cookie cutter. With thimble, cut centers from 1/2 of the circles. Place plain circles on baking sheet. Top each with 1 tablespoon pineapple filling. Top with pastry cut-outs.

With ice water on fingertips, work carefully around each pastry to seal in filling. Bake in 450 degree oven for 10 minutes or until golden. Makes 12-14 pastries.

PINEAPPLE CREAM CHEESE PASTRIES

1 pkg. (8 oz.) cream cheese
1/2 lb. butter
2 c. flour
1 tsp. vanilla

FILLING:

1 can crushed pineapple
1 c. sugar
2 heaping tbsp. cornstarch

Thoroughly cream together cream cheese and butter. Add flour and vanilla; mix well. Shape dough into balls slightly smaller than walnuts. Place balls on a platter, cover with waxed paper and refrigerate from 2 hours to overnight. Roll each ball out thin on a floured surface. Place 1/2 teaspoon filling in center of each and roll up like a miniature jelly roll.

Place seam side down on an ungreased cookie sheet and bake at 350 degrees until browned, about 20 minutes. Cool and sprinkle with confectioners’ sugar.

Filling: In a saucepan combine crushed pineapple, with syrup, sugar and cornstarch. Cook and stir until thick and clear. Cool. (Filling should be cooked a day ahead.) Yield about 100.
